Food For Thought......

DEALING WITH DISCOURAGEMENT

Discouragement can be one of the biggest obstacles in life. It can really alter our attitudes. While attitude isn't everything, it does play a huge part in how we walk through life. If we let discouragement get inside us, it can conquer us from the inside out and will prevent us form achieving the success we desire

When we are discouraged we need to make sure we:

1. Have the right perspective. I encourage you to ask yourself....

- Take a look at the whole picture
- Take a brief look at the problem
- Take a close look at yourself
- Take a long look at successful people
- Take a good look at the possibilities

2. Surround yourself with the right people.

Surround yourself with people who believe in you. People that will feed you, rather than deplete you.

3. Say the right words

A main source of discouragement is negative self-talk. "Talk" to yourself, rather than "listen" to yourself. Use the phrases like:

- The glass is half full
- It is not what happens TO me but what happens IN me that matters.
- Their problem is not MY problem
- I choose joy today.

Nobody can motivate himself in a positive direction by continually using negative words.

4. Have the right expectations

A great man once said, "Every person's life is a diary in which he or she means to write one story and is forced to write yet another."

We CAN write a better story, but we have to have the right expectations. You have to remain flexible and you can't expect everything to go perfectly. The key is to focus on what you CAN achieve, not what you can't.

5. Make the right decisions

The decisions you make and how you make them have a huge impact on our outlook.

We must FIRST, always do the right things. Few things increase discouragement the way regret or guilty conscience can. Each of us needs to be willing to look at life realistically, see ourselves as we are, and come to terms with what's true.

SECOND, the timing of our decision is important. Many people make decision when things aren't going well. They look for relief while they are down in the valley instead of waiting for the clarity that comes from being on the mountaintop. When you are in the valley, the most important thing you can do is persevere. IF you keep fighting you are likely to get your second wind, just as a distance runner does.

I love this quote form Paul J. Meyer.

"Ninety percent of those who fail are not actually defeated. They simply quit!

Recipe Of The Month

Vanilla or Chocolate Pastry Cream

Pastry cream is very versatile, use it to fill pie, tart shells, cream puffs, a Boston Cream Pie or a jelly roll cake. If you use your imagination, I'm sure you can come upwith lots more uses for this versatile filling ingredient.

You can easily make chocolate pastry cream by adding 4 ounces of semi-sweet or dark chocolate to this pastry cream along with the vanilla.

---Ingredients---

2 1/4 C milk
4 large egg yolks
2/3 C sugar
1/4 C corn starch
1/4 C flour
2 tsp vanilla extract

Makes 2 3/4 cups

---Directions---

In a medium saucepan, heat 2 cups milk to boiling. While milk is heating, whisk egg yolks, sugar and remaining 1/4 cup milk. Whisk in cornstarch and flour until smooth. Temper the egg mixture by slowly whisking in about 1/3 of the heated milk, then whisking in remaining milk. Return mixture to saucepan and cook over medium-high heat until mixture thickens and boils, whisking constantly. Reduce heat to low and cook for another 2 minutes. Remove from heat and stir in vanilla (and melted chocolate if you're making a chocolate pastry cream) or other flavorings. Pour into a bowl, press plastic wrap on the surface to prevent a skin from forming and cool to room temperature before chilling for at least 2 hours.
