Food For Thought......

THE JOURNEY OF MARRIAGE

At times the walk is arduous, for both persons or for one. Sometimes the conversation is lively; at other times, there is not much to say. My husband (Tom) and I will be celebrating our 20th Valentines Day together as man and wife. The terrain we have walked in those 20 years has been just as Kathleen and Thomas Hart described; sometimes interesting, sometimes dull, sometimes difficult, sometimes joyous. Regardless of the terrain, we have walked it together. There have been times when we have pulled each other up over the boulders and times when we have cushioned each other’s fall. In all honesty, there may have been times when we might have even tripped each other up. But as we walk, committed till the end, we recognize that a good marriage is not something you find, it’s something you work for.

Recently I saw a commercial that stated, “You never hear anyone say, I wish I hadn’t worked out today.” I had to laugh at the truth in that. I drag myself to the YMCA and make myself work out. It is not something I naturally want to do. But when I am done I feel so much better than if I sat in front of my desk all day with no exercise. Struggle and work are not always fun. But, by facing these things head on we allow ourselves to experience a deeper and richer life that a work-free or struggle-free life cannot bring.

As I tell my children. Don’t be a “quitter throw fitter”; someone who quits or has a tantrum when things get tough. Don’t run from the struggles of marriage or life. Embrace them, Grow in them. Draw nearer to God because of them.

Marriage is the greatest test in the world -- but now I welcome the test instead of dreading it. It is much more than a test of sweetness of temper, as people sometimes think; it is a test of the whole character and affects every action. – T.S. Elliot

Victorian Gingerbread Valentines

In Victorian times lovers declared their affections via words, songs, pictures and foods. One such food was gingerbread "life cakes" in the shape of hearts.

2 1/2 cups unsifted flour
2 teaspoons cinnamon
1 1/2 teaspoons ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup margarine
1/2 cup packed dark brown sugar
1/3 cup dark corn syrup
1 large egg

In large bowl, sift together flour, cinnamon, ginger, cloves and salt.

Blend together margarine and brown sugar until smooth. Add corn syrup and egg; beat well. Add dry ingredients, about one-third at a time, mixing until smooth after each addition. Chill dough one hour.

Roll out half of dough on lightly floured surface to one-quarter-inch thickness. (Reserve other half for decoratins or for a second batch of cookies.) Using hear-shaped cookie cutter, press out cookie shapes or use knife to cut around a pattern. Place hearts on cookie sheet. Decorate as desired. Bake at 350 degrees for 15 to 20 minutes until golden. Remove and place on wire racks to cool. Store in covered container.

Makes about eight 4 1/2 inch cookies.
