Food For Thought......

IT COULDN’T BE DONE

Somebody said that it couldn't be done,
But, he with a chuckle replied
That "maybe it couldn't" but he would be one
Who wouldn't say so till he'd tried.

So he buckled right in with the trace of a grin
On his face. If he worried he hid it.
He started to sing as he tackled the thing
That couldn't be done, as he did it.

Somebody scoffed: "Oh, you'll never do that;
At least no one we know has done it";
But he took off his coat and he took off his hat,
And the first thing we knew he'd begun it.

With a lift of his chin and a bit of a grin,
Without any doubting or quiddit,
He started to sing as he tackled the thing
That couldn't be done, and he did it.

There are thousands to tell you it cannot be done,
There are thousands to prophesy failure;
There are thousands to point out to you, one by one,
The dangers that wait to assail you.

But just buckle right in with a bit of a grin,
Just take off your coat and go to it;
Just start to sing as you tackle the thing
That cannot be done, and you'll do it

Chicken Melon Salad

Just Five Ingredients! Perfect for a hot summer day.

RECIPE INGREDIENTS

• 1 cup low fat mayonnaise
• 1/3 cup orange juice
• 4 boneless, skinless chicken breasts
• 2 cups gemelli pasta
• 1 ripe cantaloupe, cut into 1" pieces

PREPARATION:

In large bowl, combine mayonnaise and orange juice and blend well. Refrigerate while preparing rest of salad.

Bake chicken breasts at 375 degrees for 20-30 minutes if thawed and 60-70 minutes if frozen, until thoroughly cooked.

Let cool until cool enough to handle. Cut chicken into 1" pieces, and add to salad dressing.

Cook pasta as directed on package. Drain, rinse briefly with warm water, then drain thoroughly. Stir cooked and drained pasta into mayonnaise/orange juice mixture.

Gently stir cantaloupe into the salad. Chill 1-3 hours until cold or serve immediately. 6 servings
